Things I’ll miss about America- Craft Beer!

A vast and varying beer selection is something I’ll miss about living in the US. The beer scene in Belize is… limited. Belikin has a monopoly on the market so your choice in beer is confined to their Lighthouse Lager, Belikin regular and Belikin Stout, and Guinness (not real Guinness though, this Guinness is brewed by Belikin. So weird) You can sometimes find Heineken imported from the Caribbean along with Red Stripe or Carib.  Belikin makes seasonal and special edition brews in limited quantities but these aren’t readily…

Case the Place! Could we live in Ireland?

Ahh, the Emerald Isle! The homeland of my pasty people.  In September of 2012 my parents took us kids (Phil and I, my brother and his wife, and my sister) on a marvelous family vacation to the motherland. We squeezed an admirable amount of site seeing in to a one-week trip.  Galway, Slieve League Cliffs, Bushmill’s Whiskey Distillery, the Titanic Museum, Giants Causeway, Carrick-A-Rede rope bridge, and more castles and sheep than you can shake a stick at. I was so excited for this trip and knew that…

Living more simply- another DIY

If you liked my previous post about homemade laundry soap you might want to try this: chemical-free, super easy, DIY air freshener/ fabric spray.  Only 3 ingredients! Water essential oil (one or any combo of oils you like.  I’m partial to lemon and eucalyptus), and VODKA! That’s right!  20 drops of essential oil in 3 parts water and 1 part vodka in a spray bottle.  Voila! You have yourself an all-natural febreeze.

Cutting back on commercial consumption- DIY laundry soap

The American mentality is to spend spend spend. Buy new, bigger, better things- all the time, you need to. Buy brand name because labels are just as important as the product.  A new version of your phone hits the market? Upgrade! Your friends just had their kitchen remodeled? Maybe you should put a pool in.  Americans, we are so weird.  Appearances are everything. I worked at a homeless shelter for years and you would never guess that most of my clients were broke.  Almost all of them had cell phones,…

Miss about America- Adult Sports!

Okay! Alright! Obviously I’ll miss family and friends something fierce when we move abroad but there are other things I’ll miss about the States. For the past decade Phil and I have lived in south jersey and I’ll tell you, we’ve met some wonderful people and participated in some really fun activities.  The adult sports and recreational scene is exploding down here.       Whatever your passion or fitness level is there is a rec league in south jersey for you.  We have everything from good old…

Caye Caulker- tiny, charming, go slow

For what Caye Caulker lacks in size it more than makes up for in charm. Caulker is tiny but there is an abundance of beautiful hand painted signs, artists and craftsmen, restaurants and food carts, palm trees on white sand, laid back bars, sun bathing iguanas and wandering chickens. There is a school and a couple grocery stores and a bunch of guest houses and small hotels.  I don’t know what it would be like to live full time on such a tiny island but Caulker has me…

What a CROC!

If you’re looking to break up the nightly party scene in San Pedro with a different activity one evening you should surely take a croc tour. This educational outing isn’t offered every night so find a local that can get you in touch with the American Crocodile Education Sanctuary (ACES) guys to reserve one of the few spaces on their skiff. For a $40 per person fee that is actually a donation to the croc rescue you get a 2-3 hour  tour around the lagoon and mangroves while…
